Did you ever dream that a stranger approaches you on the street and offers you a dream job? Like Gisèle Bündchen, who was discovered while eating a burger in a mall. Martin Suter – a young butcher, not the author – has a similar story to tell. The 26 year old used to work at Coop when he got «selected» for the just opened ButchersTable: «They saw me behind the meat counter and made me an offer. Like a dream come true.»
The restaurant Butchers Table reminds of the New York where «Gangs of New York» is set, and chief Bill rules the roost. Red and green panels alternate with brick walls, the white stone wall behind the counter oozes butchery-flair, and the black and white pictures, as well as the old gramophone, add the finishing touches. Not to forget the top hat that Martin wears.
«We're inspired by the style of the Meatpacking District. We wanted to create a world where butchery was a real craft», explains co-founder and butcher-scout Daniel Caro, who had the idea together with Gregory Knie (yes, related to the famous Swiss circus) to combine a butchers shop with a restaurant.
As you can guess by now, ButchersTable is all about meat. You won't find any vegetarian dishes on the menu ,but you will find Pork Cutlets, Black Angus Outside Skirts or Flank Steaks – so called Second Cuts, lesser know pieces that are part of the nose-to-tail-movement. «Traditionally, the Swiss prefer Entrecôtes but the sustainable trend reached Switzerland a while ago, so we thought to give it a try» explains Gregory.
The served food speaks for itself and doesn't really need the fancy setting. I've rarely tasted better, and more tender, meat than in ButchersTable. Carnivores can decide between a sharing menu (from 2 people) or the «Butcher’s Choice» where you select your piece directly at the meat counter, with Martin explaining where the meat is from.
If you like high quality, sustainably-produced meat, and if you're also ready to spend a little bit more for such an experience, then you should book a table at ButchersTable.
